We have had the great honor to chat to the head Chef of SupperClub Marbella, Leonardo Ferchero, and ask him a few questions!
- Tell us a little bit about yourself. How did you get into the culinary industry?
I was born in Argentina and since I was a little kid I have always liked both cooking and the culinary world. Twenty years ago, I was studying another university degree. Still, suddenly, one day a newspaper article talking about Ferrán Adriá and his restaurant, El Bulli, which was chosen for the third time in a row as the world’s best restaurant, completely changed the way I was thinking about this field and this profession. At that time, there were several chefs who were being the main responsible for the culinary world transformation. Therefore, I started considering the fact of studying a degree related to the hospitality world. And that’s what finally happened, I decided to leave everything behind and came up with the decision of studying a Professional Culinary Degree. Unfortunately, at that time, the economic situation in my country, Argentina, was pretty difficult, so I was forced to leave school and I decided to start looking for different restaurants where to do an internship. I don’t know how, but I ended working at the best restaurant of Buenos Aires. From that moment, I realized that cooking was my real passion, and that, that was the path that I wanted to follow at that time. Throughout my career, I consider myself as a lucky person, since I have had the opportunity to work hand to hand with professionals such as Benito Gomez Becerra, Martin Berasategui or Andoni Aduriz, as well as in the most luxurious hotel restaurants, such as the Sofitel, the Ritz Carlon, and recently Puente Romano Beach Resort, where I have been working at for 5 years.
2. How did you find yourself working at this gorgeous restaurant- SupperClub?
When the owner of Puente Romano, came up with the idea of opening SupperClub, the Executive Chef of the hotel, Thomas Stork, proposed me the opportunity of being in charge of the new restaurant stove’s. From the first moment, I found this idea, as a great challenge for me. The fact of offering a high-quality menu, that at the same time was up to the show, was encouraging for me. The new and different concept of SupperClub, together with its great eagerness to surprise the customer at all times, were some of the reasons that encouraged me to accept the challenge of being its new Chef.
- Quality of food offered is always top notch at Supper Club, is there a secret to that?
The only secret is the consistency and commitment with which you do your work. From finding the best quality suppliers, to cutting the herbs at the last minute, everything in the world of cooking is important. The work behind this world is huge and therefore, it is essential to find a committed team, capable of bringing their best with every single dish.
4. How important is it for you to use the best ingredients and fresh produce for every dish at Supper Club?
I believe that it is essential to be able to offer our customers the best quality, and not only that the product is fresh, but that all the preparations that are made with them are also fresh.
5. What is that one signature dish from the menu that’s your personal favourite?
I could say that there are several, but if I have to choose one, I would choose the parmesan gnocchi. In this particular dish, you can appreciate the cuisine of SupperClub, a simple dish but at the same time with a spectacular flavour. The lightness of the gnocchi combined with the intensity of the parmesan tomato sauce with fresh basil makes it my favourite without a doubt.
