Having known of an amazing restaurant such as Spilia, which has set a standard so high that it is seemingly impossible to expect any better, we decided to interview the Owner of Spilia Manos Chaniotis to know more about him and his restaurant.

How did you come up with the concept of having a restaurant built in a cave, next to a beach?
Spilia restaurant is a family business that counts 36 years of operation. The idea belongs to my family since many years ago.
What according to you helps Spilia stand out and become an iconic hotspot?
Location, location, location…“Spilia” in Greek means cave. Spilia restaurant has a unique location which makes it special. However the location is not all you need to stand out. You need to put much effort in it. For a business to succeed, it needs love in whatever you do and consistent commitment. Managing a restaurant in Mykonos considering the strong competition of the island is not easy. You have to be on the alert and give your best in order to have good food, drinks, music, service and ambience all combined well aiming for the guests to enjoy and have a great experience. To accomplish the above mentioned you need to have a good team. Your team represents you, your effort, your love, your philosophy.

Mykonos is my favorite place in the world. As long as I remember myself, I have had the best memories in this island. I have been here for the biggest part of my life. This beautiful place is also a factor for Spilia restaurant’s success. We are blessed to be living here and the growth of the visitors keeps reminding us. We are blessed and grateful.
Moving forward, do you intend on expanding and opening more branches in other countries?
Expanding the business in other countries is a challenge for me and is something that I think of doing in the future.
