When you think of Santorini — the sun-kissed caldera views, whitewashed houses tumbling down volcanic cliffs, iconic blue domes, and crimson sunsets — you’re stepping into a dream that has inspired travelers for generations. Charlie Chahine is one of the local entrepreneurs whose early ventures helped develop some of Santorini’s favorite hotels and restaurants.
Charlie arrived in Santorini in 1994, long before the island became a global icon for luxury escapes and honeymoon goals. “Back then, Santorini was still raw, authentic, and not yet the international brand it is today,” Charlie recalls. With an instinct for opportunity and a deep respect for the island’s soul, he was among the first entrepreneurs to see that Santorini’s dramatic cliffs and wild beaches could host more than just memories — they could offer truly exceptional experiences.

His flagship property, Suites Of The Gods Cave Spa Hotel, remains a testament to that original vision. Perched on the edge of the caldera in Megalochori, this boutique hotel boasts one of the most breathtaking panoramas on the island — an uninterrupted gaze over the ancient volcano and the endless Aegean Sea. “When I first stood on this cliff, I knew there was magic here,” Charlie Chahine says. The hotel blends traditional Cycladic architecture with contemporary touches — whitewashed domes, hidden cave suites, private plunge pools, and terraces where guests can sip Assyrtiko wine while the sun melts into the sea.
It’s not only the views that make Suites of the Gods unforgettable. The Celebrities restaurant is a beloved spot for guests and locals alike. Here, dishes are crafted with local ingredients — fresh-caught fish, Santorini cherry tomatoes, capers, and the island’s unique white eggplants — all plated with finesse against a backdrop of the caldera’s grandeur. “Food is a bridge,” Charlie says. “It connects people to place. Every bite tells a story of Santorini.”

But Charlie’s passion for hospitality didn’t stop there. His newest venture, Demilmar Luxury Suites and Beach Club opened its doors on the black sands of Perissa a few years back — the island’s most iconic volcanic beach. Demilmar is remarkable not only for its modern design and laid-back style but also because it is Santorini’s only first-line beachfront hotel. “I wanted to create a space where guests could wake up, step onto their terrace, and feel the sea at their feet,” he explains. With its sea view rooms, buzzing beach club, and crystal-clear waters, Demilmar has quickly become a favorite for travelers seeking an effortless blend of comfort and natural beauty.

Of course, no journey through Charlie’s world would be complete without a stop at El Pescador. This beloved restaurant, tucked away in Perissa, is famous across the island for its legendary Greek nights. “We wanted El Pescador to feel like an authentic village gathering,” Charlie Chahine says with a smile. Twice a week, the restaurant comes alive with live bouzouki music, traditional dancing, and plates of fresh seafood, meze, and local wines flowing late into the night. “For me, hospitality isn’t just about luxury rooms and beautiful views. It’s about joy, connection, and sharing our Greek spirit with the world.”
Charlie’s path hasn’t always been easy. The island’s steep cliffs and strict architectural rules require vision and patience in equal measure. “It takes respect,” he says. “Respect for the land, the people, the traditions — that’s how you build something lasting here.” Nearly three decades since he first arrived, his philosophy remains unchanged. Every stone laid and every guest welcomed is part of his larger story: a love letter to an island that gave him inspiration, purpose, and a chance to shape unforgettable memories for others.

And Santorini itself remains as captivating as ever. Beyond the hotels and restaurants, this speck of white in the Aegean Sea offers travelers a chance to stand on the rim of an ancient volcano, sail into the caldera’s heart on a private yacht, or wander narrow alleys lined with bougainvillea and centuries-old churches. From its black and red sand beaches to its sun-drenched vineyards, the island is a tapestry of contrasts — raw nature woven seamlessly with refined hospitality.
Charlie Chahine’s story is a reminder that Santorini’s true luxury is not just its iconic views, but the people who pour their hearts into keeping its spirit alive. As the sun sets over the caldera, guests at Suites of the Gods toast to another perfect day, beachgoers at Demilmar sink their toes into volcanic sand, and diners at El Pescador join hands in a traditional dance that has echoed through Greek islands for centuries.

In a world that’s constantly chasing the next new thing, Charlie Chahine stays devoted to what really matters: authentic moments, heartfelt hospitality, and an island that, even after all these years, never stops taking his breath away.
